Summers Berry Goat Cheese Salad


                                     SUMMER'S BERRY GOAT CHEESE SALAD
Ingredients
  • 1 med. red onion, thinly sliced
  • 1 Tbsp. grapeseed oil 12 oz. spring lettuce mix
  • 1/4 c. walnuts, roughly chopped
  • 1/2 c. yellow grape tomatoes, halved
  • 1 c. mixed seasonal berries (strawberries, blackberries, raspberries, blueberries)
  • 4 oz. goat cheese, crumbled
  • 1/2 c. raspberry vinaigrette (recipe below)
Directions
  1. In a medium bowl, toss onion with grapeseed oil and a pinch of sea salt and black pepper.
  2. Place on a baking sheet and roast approximately 15-20 minutes at 350 degrees. Set aside to cool.
  3. In a large bowl, toss spring mix, walnuts, tomatoes, berries, goat cheese, roasted onions and vinaigrette. Serve immediately.
Ingredients to vinaigrette

  • 3/4 c. olive oil
  • 1/4 c. apple cider vinegar or raspberry vinegar
  • 1 tsp. sea salt
  • 2 Tbsp. raw honey
  • 1 tsp. dried basil
  • 1/2 c. fresh or frozen red raspberries
  • 1/4 c. water
Directions
  1. Place all ingredients in a blender and blend until desired consistency is reached.
  2. Store extra dressing in the refrigerator for up to 2 weeks..
