Here's a great idea for a more healthful taco. I got this one from Linda Spiker TheOrganicKitchen.blogspot.com for all of you Sabor Lovers! Instead of a corn or flour shell, this 'tortilla' is very thinly sliced jicama! Ingenious! Simply buy a raw Jimaca and thinly slice. This Jicama tortilla is topped with roasted organic chicken, lettuce, mango and avocado. Jicama (pronounced hick-ama) is a sweet root vegetable. So, thinly sliced it bends like a tortilla and has crunch! Totally satisfying with out the gluten of flour tortillas or high sugar content of corn. Perfect for the gluten intolerant:)
